Now that it’s warming up and our fresh veggies and herbs are planted, it reminds us that’s it’s just about the time we like to take out one of our favorite go-to summertime recipes. We hope you like it as much as we do. It’s a super easy to make pasta dish that’s light and yet filling without being too heavy. Perfect for summer. The fresh veggies, olive oil and fresh herbs all come together so beautifully. Every bite is full of flavor. One of the best parts, you can make the no cook sauce hours in advance and then simply cook your pasta when you are closer to dinner time.
Ingredients needed:
- 4 pints cherry tomatoes, halved
- Olive Oil
- 2 tbsp minced garlic (approx 6 cloves)
- 18 large basil leaves, cut into thin long strips (julienned)
- 1/2 tsp crushed red pepper flakes
- kosher salt
- 1/2 tsp freshly ground black pepper
- 1 pound dried angel hair pasta
- 1-1/2 cups freshly grated Parmesan cheese, (plus a little extra for serving)
Directions:
1- Combine the cherry tomatoes, 1/2 cup olive oil, garlic, basil leaves, red pepper flakes, 1 tsp salt, and the pepper in a large bowl. Cover with plastic wrap, and set aside at room temperature for about 4 hours. (We love that this can actually sit for several hours till we are ready for it! Makes cooking dinner a whole lot easier.)
2- Just before you’re ready to serve, bring a large pot of water with a splash of olive oil and 2 tablespoons salt to a boil and add the pasta. Cook al dente according to the directions on the package (approx 2-3 minutes). Drain pasta and add to the bowl with the cherry tomatoes. Add the cheese and some extra basil leaves and toss well. Serve in big bowls with extra cheese on each serving. YUM!
This dish makes a great side dish or main course. For a main course, simply add a protein of your choice: Chicken, Fish, Tofu. But make extra because because the leftovers are mouthwatering delicious- ENJOY!
