YUM – Corned Beef! You can make this easy meal for a crowd or just a small group. This year it’s just my husband and I for our annual corned beef & cabbage dinner. But I still always make this once a year even if my girls aren’t home or I’m not having guests over.
I buy the corned beef that comes packaged already seasoned. Follow your package directions, it typically takes 3 hours to cook in a large pot of water. The last hour of cooking I add the vegetables. It’s that easy a meal all in one pot!
Option: This year I decided to boil the potatoes separate. Boil in water until soft about 20 minutes & drain. Then mash with some lemon zest, butter, and parsley. They had so much more flavor!
I chopped 2Tbsp parsley, added the 2tsp lemon zest, 2tsp lemon juice, 2tsp butter and mashed the potatoes. This is a lighter version for mashed potatoes. Option: mash with milk, sour cream & butter.
Option: After the meat is cooked I make a horseradish crust(1/2 cup breadcrumbs mixed with 5oz jar of horseradish) and broil approx. 3 minutes. *If you like mustard you can spread a layer of that before adding the horseradish mixture.
Even though it’s just the two of us, I like to make the table a bit special~
I miss the days when the kids were little and we would start our day with “tricks” the Leprechaun would do before the kids woke up, make the milk green etc. and we would always start the day with green eggs or pancakes.
