This Quick & Easy Enchilada Casserole is perfect for Cinco de Mayo, Super Bowl & all your home entertaining!
Quick & Easy Enchilada Casserole is a fabulous one pan dinner recipe! This is a quick & easy family favorite. Layering in a casserole pan makes it easy to prepare & serve.
Ingredients:
- 3-4 cooked chicken breasts cubed (I usually just simmer in water for 15-20 minutes)
- Mix next 2 ingredients together to make the sauce (enchilada sauce & cream of chicken soup):
- 1 28oz can mild red or green enchilada sauce
- 1 can cream of chicken soup
- 2 cups cheddar cheese or mexican blend cheese
- 18 corn tortillas– I cut 9 of them in half
- Optional: 1 4oz can mild diced green chilis
Directions:
- Lightly spray 9×12 baking dish. Dip tortillas in the enchilada sauce. Layer 3 whole tortillas down the center of the pan, then three half tortillas along each side.
- Layer chicken, cheese, a little sauce. Repeat layer one more time, then add last layer of tortillas on the top, ladle any left over enchilada sauce over the top, sprinkle with cheese. Cover with foil.
- Bake at 350 degrees 20 min., remove foil and cook another 15-20 minutes until hot & bubbly.
- Cut into squares and serve. I like to serve with shredded lettuce on the top and a dollup of sour cream.
