A new kind of chip is in town! Nestle Toll House came out with Pumpkin Spice Chips so we just had to create a cookie recipe for it. The cookies came out so fantastic we had to share the recipe with you-
Ingredients: 1/4 Cup Sugar & 2 Tbsp Ground Cinnamon for coating**. Cooking Dough: 1-1/2 Cup Sugar, 1/2 Cup Shortening, 1/2 Cup Softened Butter, 2 Eggs, 2-3/4 Cup All Purpose Flour, 2 Tsp Cinnamon, 2 tsp Cream of Tartar, 1 tsp baking soda, 1/4 tsp salt, Nestle Toll House Pumpkin Spice Chips, 1/2 Cup Chopped Walnuts **Just want to point out that we like lots of cinnamon. If you feel you might not like 2 Tbsp, 1 Tbsp.
Heat oven to 400˚
First, Mix 1/4 cup of sugar & 2 Tbsp cinnamon & then set aside.
Beat 1-1/2 cup sugar, shortening, butter & eggs in large mixing bowl on medium speed (or with spoon). Stir in flour, cream of tartar, baking soda, cinnamon & salt. Stir in pumpkin spice chips & nuts.
Shape Dough into 1-1/4” balls. Roll in the Cinnamon/Sugar Mixture. Place about 2” apart on ungreased cookie sheet or parchment lined cookie sheet.
Bake 9-10 mins or until centers are almost set. Remove from cookie sheet onto wire rack to cool. Serve & ENJOY!!

Hi Veronica, cream of tarter is a leavening agent. It causes the the cookie to puff up. This is like a snickerdoodle recipe (with a twist). Do let us know if you make a batch & how you like them 😉

Just finished baking a batch of these cookies. Used 1 tsp of cinnamon instead of 2 tsps. cinnamon. Glad I did because there would have been too much cinnamon in the dough for our taste. Also, made some without rolling in cinnamon/sugar mixture; like those better. Cookie is similar to a Snickerdoodle..

So glad you made them. And thank you so much for sharing with us the changes you made. We totally agree, when it comes to some flavors like cinnamon, it’s good to think about personal preferences. Just made a note next to the directions with the cinnamon reminding others to consider their preferences with the cinnamon and possibly consider using 1 tbsp. Makes me think of how we love like double the amount of icing on our Hummingbird Cake Recipe. Some just like a light drizzle but we like more.
