These mini pumpkin pies were so easy to make and just the right amount of dessert. They are also great for a dessert bar to add with other choices so you can have a few bites and still enjoy another treat.
They were so easy to make with ready made pie crusts. I found the 4” circle was the perfect size to fit in a cupcake pan. I followed the directions for the filling on the canned pumpkin pie mix, and the can was 4” wide. How perfect! I used the can to cut my circle for each of the mini pie crusts, then pressed into the tin. Then poured the prepared pie mix until full in each of the prepared cups.
Using small fall cutters, from Williams Sonoma (**we compare a few fall cutter prices at the end of this post), rerolled the scraps of pie crust to make cutouts to embellish the pies. Brushed the cutouts with some of the left over evaporated milk from the filling. Then added the cutouts to the pies after the first 13 minutes of baking when I reduced the oven temperature.
Directions:
- Preheat oven to 425 degrees
- Prepare pumpkin pie filling per can directions
- Cut out 12 4” circles and line each tin in your cupcake pan, crimping top edges with your fingers
- Bake pies for 13 minutes at 425 degrees
- Turn down heat to approx 350˚, (*add top cut outs if you chose) bake for additional 19-23 minutes until filling is set, toothpick comes out clean
- Let cool and gently use a spoon to lift the pies out of the pan
Enjoy plain or with a dollop of cream~

Do these freeze well? Have an event but not a lot of time right before do they last for 3 days in the fridge ( or like traditional pumpkin pie pull away from the crust)

Hi Jodie, I would think they would freeze well. But we have not tried to do that. Yes just like you said about traditional pumpkin pie, I wouldn’t leave in frig for more than 2-3 days.
