Last night I wasn’t sure what to make for dinner. No time to get to the grocery store so my choices were slim. I decided to make up my own recipe & here is my version of – Italian Style Quinoa!
First, before I rinse the quinoa, I line my colander with a coffee filter. This helps keep the quinoa from falling through the holes.
Easy Quinoa Recipe perfect for dinner or anything. Italian Style Quinoa Caprese Style – Serve plain or with Sliced BBQ chicken! I had some leftover & added it to my husbands dinner. Other good options: Ground Turkey, Grilled Italian Sausage or Brown Italian Hot Turkey Sausage. Slice & add on top or mix it in. This is one of those recipes that anything goes. And I love that because I can change it around & it feels like I make a completely different dish each time.
Ingredients & Directions:
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 cup quinoa
- 1 cup chicken broth (*vegetable broth for vegetarian)
- 1 (14.5 oz) can diced tomatoes~I used the basil, garlic & oregano flavored tomatoes.
- 1 cup cherry tomatoes halved or quartered depending on size
- 1/2 cup fresh basil ~Roll up leaves stacked & slice thinly
- 8 oz. of fresh mozzarella, diced
- salt & freshly ground black pepper, to taste
- 1/2 cup grated parmesan, I added 1/4 cup in the dish & sprinkle remaining on top of each serving
- Heat olive oil in a large skillet over medium high heat. Add garlic & quinoa, saute until fragrant, approx. 1 minute.
- Stir in broth & tomatoes & season w salt & pepper
- Bring to a boil, cover, reduce heat & simmer until quinoa is cooked through, about 20 minutes.
- Stir in cherry tomatos, cheeses & fresh basil
- Mix in optional cooked ground turkey or top with chicken breast
- Garnish with parmesan cheese
- Serve immediately & ENJOY!
