It’s so nice to return home from a busy day with the smell of dinner cooking, and a comforting bowl of stew ready on a cold winters evening.
I like to use a london broil cut of meat(lean), I cut into cubes, dredge in flour and brown with a diced onion & 2 stalks of celery sliced. I put the meat in my crockpot and deglaze the pan with some wine. Then I add that to my crockpot also. *This is an extra step~you can just add the cubed meat to your crock pot to save time.
Add 5 cups water, 2 packets stew seasoning (store bought, see above) I used one slow cooker & one reg, I also added 1/2 pkg brown gravy for the flavor and thickness) and 2-3 bay leaves to the pot. *If you don’t like as much gravy in your stew use the one package of stew seasoning and the water it calls for. I like my stew with lots of gravy.
I added 2 cups of carrots(used frozen from trader joes~they were round & cute!), and 2 peeled/cubed russet potatoes. I also peeled and added 2 parsnips. The nice thing with this you can add the veggies you prefer.
Set your crockpot on the time frame that suits your dinner time. Mine was on for 6 hours.
*This recipe is easily adapted to stove top, brown the meat, add seasoning packet and liquid. simmer 1-2 hours. Add veggies and cook for another 45-60 minutes until veggies are tender.
Serve into bowls, let cool, and enjoy!
