Not enough time? You can still create an amazing Fast and Healthy Frittata Style Bake.
Ingredients:
- Eggs (I use mostly egg whites & only a few yolks)
- Skim Milk
- Red Peppers, Asparagus, White Onion, Mushrooms
- Shredded Cheddar Jack Cheese
- Salt & Pepper
Mix eggs & milk together & pour into casserole baking dish that has been coated lightly with olive oil (or cooking spray). Sprinkle in veggies. Bake covered on 375 for about 20 minutes. Uncover & sprinkle the cheese across the top, when its looking fluffy & cooked.
3 important tips that make this faster: 1-Not cooking veggies separately in pan. But because of this some veggies won’t cook well, like potatoes, because they do need more time to cook thoroughly. 2- cut up your veggies small so they cook faster. 3- if you use a container of liquid egg whites you save the time from cracking all the eggs. I, personally do not like the yellow imitation liquid eggs like beaters but I do love liquid egg whites. No taste difference there.
