Here’s the Recipe:
- 1 29oz can pure pumpkin
- 1 12oz can evaporated milk
- 3 eggs
- 1 cup sugar
- 1 tsp salt
- 3 tsp cinnamon
- 1 box yellow cake mix
- 1 cup chopped pecans
- 3/4 cup melted butter (or margarine)
Preheat oven to 350 degrees. Mix first 6 ingredients until well blended, and pour batter into a greased 9×13 baking pan. Sprinkle cake mix on top & then cover with pecans. Drizzle melted margarine over the top. Bake approx 50 minutes. **We did make a change to the recipe & mixed the margarine into the cake mix, then gently spread it across the top & added the pecans. This helped the top to cook more evenly.
