While we are doing our part and spending more time at home, we are cooking more. The stores can’t seem to restock bread fast enough, so this easy-to-make dough comes in real handy.
How easy? The dough recipe only needs 2 ingredients. It’s perfect for making rolls, pizza crust, breadsticks and like the instructions in this post, delicious fluffy warm bagels. YUM!
All you need is equal parts Plain Greek Yogurt* and Self Rising Flour*.
*We prefer using Fage 0% Plain Greek Yogurt. There is something about the consistency of the yogurt and the bagels come out more fluffy than when we tried other brands. If you don’t have Fage available use a lower sugar plain greek yogurt. Some other brands do have a lot of sugar.
*If you don’t have self rise flour, you can make a combination of: 1 cup all purpose flour, 1 1/2 tsp baking powder and 1/4 tsp salt. You can use the dough for many different recipes but we will use it now to make a batch of warm fluffy bagels. For toppings we will need 2 egg whites, Trader Joe’s Everything Seasoning and some roasted sesame seeds. And as an extra note during this time of shelter in place & limited supplies in stock, many friends have shared with us that their local supermarket bakeries are selling flour & yeast by the pound.
We use a KitchenAid mixer with a bread hook attachment to mix the flour and greek yogurt. You can knead the dough by hand but it is so much easier to use the mixer. After ingredients are thoroughly mixed let the dough stand for approximately 5 minutes before shaping the bagels. If you find the dough is too sticky, add a little more flour to the mixture.
Keep some flour close by. Lightly coating your hands with it helps keep the dough from sticking to your hands. For each bagel, form a small ball. Roll back and forth, in your hands, into a strip of dough approximately 1″ thick, and 6″ long. Join each end together to form the bagel shape. Place bagel dough into a donut baking pan (or on a parchment paper lined cookie sheet). When all bagels are formed, brush with egg whites and sprinkle desired toppings. Our favorite topping is a combination of Trader Joe’s Everything Seasoning and Roasted Sesame Seeds.
Bake at 400˚ till golden brown. Serve warm or store in refrigerator till ready to use. We are not fans of them straight out of the refrigerator cold. But, they toast beautifully!
We also made our own hot dog bagel bites (our version of pigs in a blanket). YUM!

Hi Lulutoo, So happy to hear you found our recipe in the Diablo Gazette. The recipe is for equal parts greek yogurt and self rising flour. When making the bagels, I usually make either 1 or 2 cups of each depending on how many bagels I want to make. My family loves them so I will go for 2 cups so I have a few extra. (store the extra in the refrigerator). Let us know how your bagels come out. Randi~
