In our quest to eat healthier, reduce carbs and increase protein, breakfast has been less of a challenge with these easy to make breakfast egg bites.
Like mini omelettes, breakfast bites are a super flexible recipe and can be made with your favorite ingredients and seasonings. We love lots of veggies, a protein like ham or sausage pieces and using liquid eggs or liquid egg whites which is a real time saver too.
We change up the ingredients regularly but for this recipe we are using:
- liquid eggs (we also like liquid egg whites)
- shredded cheddar cheese
- green onions
- cherry tomatos
- ham
Directions:
- Preheat oven to 350˚
- Slice veggies and ham into small pieces and lightly sauté in pan for 3 minutes.
- Spray pan with non stick cooking spray
- Spoon approx 1 tablespoon of veggie mixture into muffin pan (a mini muffin pan can work too but they will be super small).
- Add a generous pinch of shredded cheese
- Fill with egg mixture approx 3/4 way up
- Bake till fluffy and top is browning for approx 15 minutes. They will look “inflated”. As they cool they will “deflate” some and spoon out of pan easily.
Serve with assorted toppings like sliced avocado, guacamole, salsa, sriracha.
