Baked Quesadilla Squares are so easy to make! They are a fabulous appetizer, side dish or main course.
Perfect recipe for entertaining: Superbowl, Cinco de Mayo, family gathering or any time. You can cut into bite size or a little larger for side dish or larger for main course. This is such a flexible recipe in so many ways.
Ingredients:
- 2 cups shredded cheddar cheese
- 2 cups shredded colby jack cheese
- 2 -4 oz cans diced green chillies, drained
- 2 cup milk
- 1 cup buttermilk baking mix
- 4 eggs beaten
- 1/4 cup salsa
- Preheat oven to 425˚
- Spray 9×13 glass dish with nonstick spray.
- Sprinkle cheeses in bottom & top with chillies.
- Combine milk, baking mix & eggs, beat until smooth.
- Carefully pour over chillies.
- Top with 1/4 cup salsa.
- Bake approx 25-30 mins, until puffed & golden.
- Cool 10 mins & cut into squares.
Serve with salsa, sour cream &/or guacamole
