Almond Flour Chocolate Chip Cookies have been a lifesaver since our New Year Resolution to try eating healthier, lower carb and higher protein. We are not super strict and do not claim to be health experts, dietitians, or doctors in any way. We are just trying to live a healthier lifestyle and find reducing some empty carbs is easier these days with products like almond flour.
After trying a few recipes found online, this recipe is our tweaked version that has kept our sweet tooth satisfied. Sure, the dark chocolate chips are probably a no-no to those who are strictly no carb, but for us, we need our dark chocolate.
Ingredients:
- 3 cups Almond Flour
- 2 large Eggs
- 1/2 cup Butter, softened
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 2 tsp Vanilla Extract
- 1/4 cup Coconut Oil
- 3/4 cup Brown Sugar (or Coconut Sugar or Splenda Brown Sugar Blend)
- 1-1/4 cup Dark Chocolate Chips
- 2/3 cup chopped walnuts
- 2/3 cup chopped pecans
Directions:
- Preheat oven to 350˚
- Using a stand up mixing bowl, cream together butter, coconut oil & brown sugar. (using a stand up or hand held mixer works best for a creamy & thorough mixture).
- Add vanilla and eggs.
- Add baking soda & salt.
- Add almond flour one cup at a time.
- Fold in chocolate chips and nuts with wooden spoon.
- Spoon mixture onto parchment paper lined cookie sheet approx 1″-2″ apart.
- Bake until golden brown, approx 11-13 minutes.
Of course you can tweak per your needs and preferences. Less or more of the chips or nuts, add your favorite nuts. Some wonderful additions we have tried in some batches: Unsweetened Shredded Coconut, Hempseed, white chocolate chips, even a few M&M’s. Depending on how strict you are about the low carb or just trying to avoid using empty carbs, using the almond flour instead of regular flour makes a big difference. One more fun and tasty twist is to substitute one of the cups of almond flour for coconut flour.
