Starting to think about freshening up the house with some spring decor. Which made me start thinking about our families favorite springtime cake.
BEST HUMMINGBIRD CAKE RECIPE! We enjoy this every springtime. Our Easter tradition, my future son in~law likes its so much I made the recipe into mini cupcakes for their engagement party.
I’m sure this recipe will become one of your families favorites also.
Ingredients for cake:
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 cups sugar
- 1 teaspoon ground cinnamon
- 3 large eggs, beaten
- 1 cup vegetable oil
- 1-1/2 teaspoon vanilla extract
- 1 (8 oz) can crushed pineapple, undrained
- 1 cup chopped pecans
- 2 cups chopped bananas
- cream cheese frosting
- 1/2 cup chopped pecans
Ingredients for Cream Cheese Frosting:
- 2 8oz pkg of softened cream cheese
- 1 cup softened butter (or margarine)
- 2 16oz pkg powdered sugar
- 2 tsp vanilla extract
Combine first 5 ingredients in a large bowl & then add eggs & oil. Stir until fully moistened. (do not beat). Stir in vanilla, pineapple, 1 cup pecans, and bananas.
Pour batter into 3 greased & floured 9″ round cake pans. Bake at 350° for approx 30 minutes or until a wooden toothpick inserted comes out clean. Cool pans on wire racks 10 minutes & then remove cakes from the pans & then finish cooling completely on the wire racks.
Prepare the cream cheese frosting: Beat cream cheese and butter in mixer on low/medium speed, until smooth. Gradually add powdered sugar until fully blended. Add in vanilla. Mix on medium approx 2 minutes until fluffy.
Place first layer onto serving platter and spread cream cheese frosting across the top. Place next layer onto the frosted bottom layer and frost the same as the first layer. Repeat again on the third layer as well as frost the sides too. Sprinkle 1/2 chopped pecans on the top. Store in refrigerator. **Note that we like to make extra cream cheese frosting. Not quite double, more like 1 and a half. But if you want extra, we like to frost sugar cookies, double will be more than enough. We LOVE LOVE LOVE it & didn’t feel the recipe made enough. But if we do have extra frosting, we use it to frost sugar cookies and top with fresh berries. YUM!
